High protein. Cozy. Budget friendly. And made with what I already had in my kitchen
Here’s the recipe:
🥣 Creamy Chicken, Carrot & Rice Soup
Ingredients:
• 1 lb boneless chicken
• 4–5 carrots, sliced
• 1 small onion, diced
• 2 cloves garlic, minced
• ½–¾ cup uncooked rice
• 3 tbsp butter
• 3 tbsp flour
• 4 cups water
• 1–2 tsp chicken bouillon
• 1–1½ cups milk
• Salt & pepper
Directions:
1️⃣ Simmer chicken in water + bouillon 20–25 minutes. Remove, shred, save broth.
2️⃣ In same pot, melt butter. Sauté onion + garlic. Add carrots and cook 5 minutes.
3️⃣ Stir in rice and pour broth back in. Simmer until rice is tender (15–18 minutes).
4️⃣ Mix flour with a little milk until smooth. Stir into soup with remaining milk.
5️⃣ Add chicken back in. Simmer until thick and creamy. Season to taste.
