Submitted by   Kevin G Prep Time:   10 mins Total Time:   10 mins Servings:   4  Yield:   1 cup Ingredients 1   cup   all-purpose flour 1 ½   teaspoons   baking powder ¼   teaspoon   salt 1   tablespoon   butter Directions Gather all ingredients. Sift flour into a bowl. Add baking powder and salt and whisk until fully incorporated. Cut butter into flour mixture using a pastry cutter until evenly combined. Use this homemade baking mix in recipes that call for baking mix, or store it in an airtight container in the refrigerator and use it within 2 to 3 weeks. Simple nourishment.  After a full day of homeschooling, errands, and all the things… this Creamy Chicken, Carrot & Rice Soup just hits different. High protein. Cozy. Budget friendly. And made with what I already had in my kitchen  Here’s the recipe: 🥣 Creamy Chicken, Carrot & Rice Soup Ingredients: • 1 lb boneless chicken • 4–5 carrots, sliced • 1 small onion, diced • 2 cloves garlic, minced • ½–¾ cup uncooked rice • 3 tbsp butter • 3 tbsp flour • 4 cups water • 1–2 tsp chicken bouillon • 1–1½ cups milk • Salt & pepper Directions: 1️⃣ Simmer chicken in water + bouillon 20–25 minutes. Remove, shred, save broth. 2️⃣ In same pot, melt butter. Sauté onion + garlic. Add carrots and cook 5 minutes. 3️⃣ Stir in rice and pour broth back in.
