  • 1 pound dried elbow macaroni
  • 6 tablespoons (¾ stick) unsalted butter, plus more for greasing the dish
  • 1 ½ pounds medium cheddar cheese (about 6 cups shredded)
  • ¼ cup all-purpose flour
  • 5 cups whole milk, half-and-half, or a mix of both
  • 1 ¾ teaspoons kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Paprika, for garnish (optional)

👩‍🍳 Directions

  1. Preheat and prep:
    Heat your oven to 350°F and butter a 9x13-inch baking dish.
  2. Cook the pasta:
    Bring a large pot of salted water to a boil. Cook the macaroni for about 2 minutes less than the package suggests — it’ll finish cooking in the oven. Drain and set aside.
  3. Make the cheese sauce:
    In the same pot, melt 6 tablespoons butter over medium heat. Whisk in ¼ cup flour and cook for about a minute, until it smells slightly nutty and golden.
  4. Add the milk:
    Slowly whisk in 5 cups milk or half-and-half, about ½ cup at a time, whisking until smooth. Bring to a gentle boil, then reduce to medium-low and simmer until thickened — about 5 to 7 minutes.
  5. Add the cheese:
    Remove from heat and stir in 5 cups shredded cheddar, along with salt and pepper, until melted and smooth.
  6. Combine:
    Stir the cooked macaroni into the sauce until every piece is coated in cheesy goodness.
  7. Layer and bake:
    Spread half the macaroni mixture into the prepared dish. Sprinkle with half of the reserved cheese, then repeat the layers. Finish with a light sprinkle of paprika for color.
  8. Bake:
    Bake for 10–15 minutes, or until the edges are bubbling and the top is golden brown.
