Fall is in the air, and that means it’s the perfect season for warm, hearty meals that make your whole house smell amazing. I came across this recipe for Kristen’s Crock Pot White Chicken Chili, and while I haven’t tried it yet, I can’t wait to! It’s one of those set-it-and-forget-it meals that feels like a hug in a bowl.
This recipe uses simple ingredients, a little bit of spice, and a creamy finish that makes it perfect for chilly evenings, busy days, or game nights. The best part? The crock pot does all the work.
Ingredients
- 2 chicken breasts
- 1 can black beans, drained and rinsed
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 can Rotel, undrained
- 1 tsp onion powder
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 packet ranch seasoning
- 8 oz cream cheese
- 1 can water
Instructions
- Prep the Crock Pot
Spray the inside of your slow cooker with nonstick spray (optional, but makes cleanup easier). - Layer the Ingredients
Place the chicken breasts in the bottom of the crock pot. Add the beans, corn, Rotel, seasonings, cream cheese, and water. - Cook
Cover and cook on low for 6–8 hours or high for 3–4 hours. - Shred the Chicken
About 30 minutes before serving, remove the chicken, shred with two forks, then return it to the crock pot. Stir until everything is creamy and well combined. - Serve and Enjoy
Dish into bowls and add your favorite toppings—shredded cheese, tortilla chips, cilantro, avocado, jalapeños, or a squeeze of lime.
