Fall is in the air, and that means it’s the perfect season for warm, hearty meals that make your whole house smell amazing. I came across this recipe for Kristen’s Crock Pot White Chicken Chili, and while I haven’t tried it yet, I can’t wait to! It’s one of those set-it-and-forget-it meals that feels like a hug in a bowl.


This recipe uses simple ingredients, a little bit of spice, and a creamy finish that makes it perfect for chilly evenings, busy days, or game nights. The best part? The crock pot does all the work.





Ingredients



  • 2 chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can Rotel, undrained
  • 1 tsp onion powder
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 packet ranch seasoning
  • 8 oz cream cheese
  • 1 can water






Instructions



  1. Prep the Crock Pot
    Spray the inside of your slow cooker with nonstick spray (optional, but makes cleanup easier).
  2. Layer the Ingredients
    Place the chicken breasts in the bottom of the crock pot. Add the beans, corn, Rotel, seasonings, cream cheese, and water.
  3. Cook
    Cover and cook on low for 6–8 hours or high for 3–4 hours.
  4. Shred the Chicken
    About 30 minutes before serving, remove the chicken, shred with two forks, then return it to the crock pot. Stir until everything is creamy and well combined.
  5. Serve and Enjoy
    Dish into bowls and add your favorite toppings—shredded cheese, tortilla chips, cilantro, avocado, jalapeños, or a squeeze of lime.
